Pancake Ingredients
- 45g vanilla whey
- 30g all-purpose flour
- 80g 30 calorie almond milk
- 46g egg whites
- ½ tsp vanilla extract
- ¼ tsp baking powder
- stevia/splenda to taste
Filling Ingredients
- 254g low fat ricotta cheese
- stevia/splenda to taste
- a dash of cinnamon
- 15g mini chocolate chips
Directions
- In a mixing bowl, thoroughly mix together all pancake ingredients.
- Pour 2 circles of pancake batter over medium-low heat on stovetop (spray with 0 cal nonstick spray first) and cook until golden brown, then flip to cook other side. Let cool.
- In another mixing bowl, combine all filling ingredients except for chocolate cihps and mix thoroughly.
- Fold over pancakes and stuff with filling.
- Place chocolate chips on outside of filling. Add a dash of powdered sugar and cinnamon on top, if desired. Enjoy!
