Step up your breakfast game by transforming boring protein pancakes into a gourmet Italian treat!


Macros (per serving)


(recipe yields 2 servings)

Pancake Ingredients

  • 45g vanilla whey
  • 30g all-purpose flour
  • 80g 30 calorie almond milk
  • 46g egg whites
  • ½ tsp vanilla extract
  • ¼ tsp baking powder
  • stevia/splenda to taste


Filling Ingredients

  • 254g low fat ricotta cheese
  • stevia/splenda to taste
  • a dash of cinnamon
  • 15g mini chocolate chips



  1. In a mixing bowl, thoroughly mix together all pancake ingredients.
  2. Pour 2 circles of pancake batter over medium-low heat on stovetop (spray with 0 cal nonstick spray first) and cook until golden brown, then flip to cook other side. Let cool.
  3. In another mixing bowl, combine all filling ingredients except for chocolate cihps and mix thoroughly.
  4. Fold over pancakes and stuff with filling.
  5. Place chocolate chips on outside of filling. Add a dash of powdered sugar and cinnamon on top, if desired. Enjoy!
